  • 2 grilling planks
  • 4 (4 oz. ea.) salmon fillets
  • 3 tbsp. melted butter
  • 3 tbsp. honey
  • 2 cloves garlic, minced
  • 1 lemon, zested and sliced
  • Salt and pepper to taste

    1. Before you begin, place the grilling planks into water to soak for at least 30 minutes, while you prepare the ingredients and preheat the barbecue grill.

    2. Preheat the barbecue to 400°F (200°C), setting all burners to medium-low.

    3. In a small bowl, combine the melted butter, honey, garlic, lemon zest and a squeeze of lemon. Reserve about 1/3 of the honey-butter mixture.

    4. Season the salmon to your liking with salt and pepper.

    5. Place the grilling planks onto the barbecue and arrange the salmon filets on top of the planks. Brush the salmon with the honey-butter mixture and arrange some slices of lemon on top.

    6. Close the barbecue and cook for 6 to 8 minutes. Spoon or brush them again with the honey-butter and cook with the lid closed for another 6 to 7 minutes, or until the fish is tender and flakes easily. A finished temperature of 145°F (63°C).

    7. Serve on a bed of rice and drizzled with the reserved honey-butter. You can also try this meal with some baby potatoes and your favorite seasonal vegetables.
